Isaac has been part of our team for 9 straight years and now forms part of our Board of Directors. He has recently been appointed to oversee the Research and Development Department of Ta’ Xmun. He marks the third generation of pastry chefs in the family. Isaac is a very creative person with a fine eye for detail. He is passionate about flavours and how these can be integrated to satisfy our customers taste buds. Isaac loves to create new aesthetically pleasing dishes, sweets, and impeccable chocolate showpieces.
What’s your job title?
I’m a Sous Chef and recently am also in charge of our R&D.
What sort of duties do you have at work?
My duties are to make sure my team keeps a high level of productivity and quality. Sourcing high quality ingredients whilst come up with new, improved mouth watering food and pastries. At the moment I am also excited in working on a side project that is related to events and cannot wait for our customer’s reaction and feedback.
What’s the most exciting part of your job?
I see food as an art and the most exciting part of my job is exploring new ideas which lead to creating something new and unique. Although I enjoy all kinds of sweet and food experimentation I mostly enjoy creating chocolate showpieces.
What’s that something you find challenging about your work?
Keeping a team motivated, with positive attitude whilst ensuring effective communication is quite challenging, especially since we are like a family, implying that we care about one another on an individual level. I also find time constraints challenging as they limit my to do list – which is never ending, hehe…
What motivates you at work?
Accomplishing long term goals and solving daily challenges motivates me and give me great satisfaction.
What’s your favourite Ta’ Xmun Cake?
My favourite cake is the oreo cake.
Is there any particular positive experience that you remember?
I had many, however I have participated in Malta Kulinarja and have won 3 silver medals in Chocolate Showpiece, Pastry challenge & Gateaux Creation.

I prefer sweet.

My father inspires me.
Do you like traveling and what’s the best place you’ve travelled to?
Yes, I love travelling and my favourite destination is Tenerife.
Are you a sports fan? Who is your favourite team?
Yes, I do enjoy sports mostly international football competition. My favourite competition is the world cup and I always support Spain.
Do you have any hobbies?
My hobby is to work out and practice sports.

My biggest fear Is not achieving my set goals.
What is that one thing you are really bad at?
I’m really bad bad at dancing and singing.
